Savoury Carrot & Parsley Pancakes

I have grated some carrots for making salad and finally there were some leftovers as i prepared a mixed veggies salad, i added half a cup of finely chopped parsley leaves, eggs and corn flour to make out this simple but yet a delicious and quick pancakes...We enjoyed having this cute savoury pancakes just without any side dish while my DH had them with ketchup..Easy breezy breakfast pancakes to enjoy for a lazy sunday morning or a simple and quick snacks to prepare easily, needless to say that this savoury carrot and parsley pancakes goes to my Pancakes Event..

Ingredients:
  • 2nos Eggs
  • 1/2cup Grated carrots
  • 5sprigs Parsley leaves (chopped)
  • 3tbsp Cornflour
  • 3tbsp Water
  • Pepper powder
  • Salt
Method:
Beat the eggs well with cornflour, water, pepper powder and salt until everything get well mixed, finally add the grated carrots, chopped parsley leaves to the beatened eggs-flour mixture, mix well..Heat few drops of oil, pour a small quantity of this pancake batter and cook on both sides until they get well cooked..

Enjoy warm..
