Oyster Mushrooms Curry
Putta Godugula Kura.
Oyster mushrooms are washed and dried before chopping them. Oil is tempered with spices and onion is fried till its light golden brown. Then the chopped mushrooms are added and fried till cooked. Finally the curry is seasoned with salt and red chile powder. Serve the mushrooms curry with steamed rice or with roti.
Makes: around 2 Servings of Oyster Mushrooms Curry
Ingredients:
- Oyster Mushrooms 1 1/2 Cups
- Onion 1
- Green Chile 1
- Red Chili Powder 1/2 tsp
- Turmeric Powder a Pinch
- Salt to taste
Talimpu:
- Urad Dal 1/4 tsp
- Mustard Seeds 1/4 tsp
- Cumin Seeds 1/4 tsp
- Broken Dried Red Chili 6
- Oil 1 tbsp
Method of preparation:
Rinse the oyster mushrooms under fresh water and drain them.
Spread on a kitchen towel to let them dry for couple of minutes.
Once dried, oyster mushrooms are halved or quartered.
Peel and finely chop the onion.
Remove stem, wash, discard seeds and finely chop the green chile.
Heat oil in a pan medium heat, add all talimpu ingriends in order.
When urad dal changes color, add chopped onion and green chile.
Fry till onion turns light golden color, stir in chopped oyster mushrooms.
Fry the mushrooms for around 5 minutes to let them cook.
Stir in red chili powder and salt.
Serve oyster mushrooms curry with steamed rice or with roti.
Notes: Make sure the mushrooms are cooked properly.
Variations: You can also add chopped tomato to make it a wet curry.
