Peerkangai Kootu / Ridge gourd Kootu


Ridge gourd is one veggie where we unianimously say YES to include in our meal. This is how my grandma prepares and I just love it to the core.. My patti used to make this curry esp when fasting.. Just add this curry with rice and drizzle few drops of ghee and it's good to go..Slurp !!! Still i could feel the taste in my mouth..But sorry guys, while making this curry i's not there for a moment and that slightly charred my seasoning..U don do like that....
Ingredients :
- Ridge gourd -- 2 nos.
- Onion -- slivered -- 1 no.
- Tomato -- chopped -- 1/2 no.
- Red chilli powder -- 1/2 tsp
- Oil -- 1 tbsp
- Mustard seeds -- 1/2 tsp
- Urad dal -- 1/2 tsp
- Channa dhal -- 1 tsp (soaked)
- Curry leaves -- a sprig
- Shredded coconut -- 1/4 cup
- Fennel seeds -- 1/4 tsp
Clean the ridge gourd and peel the skin. Do not throw away. Reserve the skin to make thogayal. Now chop the ridge gourd into chunk pieces. Grind the items given above to a fine paste. Now take a karahi and pour the oil. Do the seasoning when the oil is hot with mustard seeds. U might wanna close the karahi with a plate otherwise u'll be left with mustard seeds all over in the kitchen. Then add the urad dal and fry it. Drop in the soaked channa dal now and fry . Add the curry leaves too. Add the onions,salt and saute till it turns translucent. Dump in the chopped tomatoes and cook until it totally disintegrates. Add the chopped ridge gourd and the red chilli powder and saute for a minute . Add half a cup of water and mix well. Cover the karahi and let it cook until the ridge gourd gets almost cooked. Later add the ground coconut paste and mix well. Cook this mixture for 2 more minutes and then switch off. Goes good with roti's and rice..
