Poondu Kulambu /Garlic Kulambu

Seriously I had no idea how to make this awesome kulambu though i'm a big fan of garlic. I din't make any efforts to learn this kulambu as my H doesn't like as much i do. But for this chill weather i wanted to have something hot and spicy and with the grace of vonage ,i've the privilege of calling my mom anytime (ofcourse even odd times ...I know i should not..But can't help my urge...). Called my mom and she dictated and thatz how i learned this recipe..Sure, this recipe is a keeper .. And I love it to the core....


Ingredients :
  • Garlic pods -- 10 to 15 nos.
  • Tamarind -- lemon sized
  • Onion -- chopped -- 1/2 no.
  • Tomato -- chopped -- 1 no.
  • Sesame oil -- 4 tbsp
  • Curry leaves -- a sprig
  • Salt -- to taste
  • Mustard seeds -- 1 tsp
  • Urad dal -- 1/2 tsp
  • Channa dal -- 1/2 tsp
  • Turmeric powder -- 1/4 tsp
  • Fenugreek seeds -- 1/4 tsp
  • Jaggery -- 1/2 tsp (optional )
Roast and grind to a paste :
  • Coriander seeds -- 2 tbsp
  • Dry red chillies -- 5 to 6 nos.
  • Pepper corns -- 1/4 tsp
  • Cumin seeds --1/2 tsp
  • Fenugreek seeds -- 4 nos.
  • Shallots -- 5 small
  • Curry leaves -- 4 to 5 leaves
  • Garlic Pods -- 2 nos.
  • Fennel seeds -- 1/4 tsp
Method :

First roast the items given one by one and let it cool. Grind all these ingredients to a fine smooth paste adding sufficient water. Soak the tamarind in hot water and squeeze out the juice. Mix the ground paste in the tamarind juice and add turmeric powder and salt. Mix everything together and keep it ready. Take a karahi and do the seasoning. first add the 2 tbsp of sesame oil and heat it. Add the mustard seeds and pop it.Add the urad dal and channa dal and fry until it turns slightly golden brown, followed by fenugreek seeds and curry leaves.Now add the garlic pods and saute well for 3 minutes in the oil. Now add the tamarind mixture into this seasoning and mix well. Add a cup of water .Cover and cook this mixture until u get rid of the raw smell and that will take probably 5 to 7 minutes. Later add the jaggery and mix well. Finally add the remaining 2 tbsp of sesame oil and let it boil for 3 more minutes and switch off.

Note :

U may omit the fenugreek seeds while grinding if u r against it. This kulambu is made acc to my family needs ,i mean, as per taste. U can modify to suit ur taste. Adding jaggery is also optional,but trust me, it just enhances the flavour of this kulambu..
