Ridge Gourd Chutney / Beerakaya Pachadi

A simple delicious chutney is a great way to start a meal in andhra.It is a common practise to have this chutney as a accompaniment with rice. However this goes well with rotis too. Here is the recipe.

Ingredients

  • 250 gms ridge gourd
  • 1 1/2 tbsp urad dal
  • 4 red chillies
  • 1 tsp jeera/cummin seds
  • 1/2 tsp mustard seeds
  • pinch of fenugreek seeds
  • pinch sugar
  • little tamarind
  • 2 tsp oil
  • salt to taste
For tempering
  • 1/4 tsp mustard seeds
  • 1 red chilli
  • pinch of hing/asafoetida
  • 1 spring curry leaves
Procedure

Wash the ridge gourd and chop it into medium size chucks.Keep aside.

Heat 1 tsp oil in a pan, add urad dal, cummin , mustard and fenugreek seeds. Once cummin seeds starts to splutter add red chillies and saute if for a min. Transfer it then to a plate.Once it cools grind to a fine powder.

In the same pan add 1 tsp of oil and the choped ridge gourd and fry for 1-2 minutes or until it becomes translucent. Do not overcook it. Switch off the flame.

Once it cools add the ridge gourd to the above grinded powder with tamarind,salt,sugar and grind to a fine paste.

Transfer it to a serving bowl.

Prepare the tempering with 1 tsp oil in a pan.Add mustard seeds,hing. Once it splutter add the red chillies and curry leaves and saute it for 1/2 min and immediately pour it over the chutney.

Mix and serve it with rice or chappati.


Note
1.Do not peel the ridge gourd as it gives a unique flavor and it is full of fibre.
2.Do not overcook the ridge gourd as it will loose its flavor.

Milky Aloo Palak Gravy

Potato and spinach simmered in milk with some traditional indian spices which make this gravy have a heavenly flavor .If you have some guests at home and want to make something easy,delightful and healthy this would be the ideal choice. It is the perfect accompaniment for roti and rice. So here is the recipe

Ingredients
  • 1 cup diced potato
  • 1/4 cup chopped onion
  • 1 bunch palak/spinach
  • 1/2 tsp urad dal /
  • 1/4 tsp cummin seeds
  • 1 cup milk
  • 1-2 green chillies
  • 1 tbsp oil
  • 1/2 tsp besan / chickpea flour
  • salt to taste
Procedure

Mix the besan with the milk and keep aside .

Heat oil in a pan, add cummin seeds, urad dal, green chilli and fry. Add the onions and fry till translucent then add the potato and salt fry till it become tender.

Now add chopped palak stir, then add the milk mixture and mix nicely. And let it cook till palak is done.Serve immediately with roti or rice.

Note: Adding besan to milk will avoid the milk to curdle.

Low Fat Eggless Banana Bread


This is my first cake recipe without eggs and believe me you won’t miss the eggs! With it unique blend of ingredients you can still make a eggless cake that can rock a party.The original recipe was adopted from Jayshris Kitchen who inspired me to try this recipe. I changed it a bit to suit my taste-buds. It came out very well soft, moist with a tender flavor of bananas. Here is the recipe ...

Ingredients
  • 3/4 cup wholewheat flour
  • 1/2 cup all purpose flour
  • 3/4 cup brown sugar
  • 2 ripe bananas
  • 1/4 cup milk
  • 2 tbsp yogurt
  • 1/4 cup oil
  • 1/2 tsp cinnamon powder
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp tutty fruity
  • 1/8 tsp salt
Procedure
Preheat the oven to 180 degree Celsius.Grease the loaf pan and keep aside. Sieve the dry ingredients,wheat flour, all purpose flour, baking soda, baking powder, salt and cinnamon powder together 3 times.

Beat milk and sugar together till sugar dissolves.Add oil,yogurt,mashed banana, vanilla extract and mix nicely.Combine with the above dry ingredients and mix nicely until all lumps dissappear. Pour the batter in a 9x5x3 inch loaf pan upto 3/4 level.Sprinkle some tutty fruity over it. Bake for 50 minutes and test with a toothpick in the very center of the loaf to come out clean.Let it cool on a cooling rack, slice and enjoy.

Note:
1.You can replace brown sugar with normal sugar but it will be more sweeter.
2.Adding cinnamon powder is optional however it gives a good flavor

Ragi Masala Dosa With Cauliflower Filling


In a fast paced lifestyle with all the junk entering our system the only solution is to start your day with the healthiest breakfast. And there is no better grain like ragi to have. Its nutritional benefits makes me wonder why we indians are moving away from this wonder grain.This dosa has a earthy and nutty flavor unlike a regular dosa but a lot tastier. You must try it to believe it !!
 
Ingredients
  • 3 cup ragi flour
  • 1 cup rice
  • 1 cup urad dal
Filling
  • 1 cup finely chopped cauliflower
  • 1/2 cup finely chopped onions
  • 1/4 cup finelt chopped tomatoes
  • 1/2 tsp chilli powder
  • 1 tbsp oil
  • salt to taste.
Procedure
 
Soak rice and urad dal for 4 hrs. Make a smooth paste with enough water. Add the ragi flour to it. Mix ricely with a spatula until all lumps dissapear. Ferment it overnight. Your dosa batter is ready for the next day.

For stuffing heat oil in a pan, add onions and fry till they become translucent. Then add cauliflower and sprinkle salt and cook till the cauliflower becomes soft.Add the tomatoes, keep stiring till it becomes soft. Add the chilli powder and chopped cilantro , mix well and switch off the flame and keep aside.


Heat tawa on a low flame , add one cup batter in the center and spread it nicely in a circular motion and spread one tbsp of  filling over it.Then increase the flame to medium and let it become crispy. Increase the flame to high for a few seconds for a golden crust, fold and serve hot with your choice of accompaniment.

Taro Root Fry with Hot Chilli Ginger Dip


Some recipes are passed generation to generation.Todays dish was 
shared by my great grand mother in law to my MIL !! The beauty of this dish is the dip that perfectly compliments the flavor of the taro root. My MIL taught me this dish as it is one of my hubby's favorite. And sure you would enjoy it too...

Ingredients
  • 1/2 kg taro root medium size
  • salt to taste
  • oil for deep fry
For dip
  • 1 inch ginger
  • 6 long red chillies
  • salt to taste
Procedure
Wash taro in running water and pressure cook it with enough water and salt for 3 whistles and sim it on low flame for 3 minutes. Switch off the cooker and once it cools discard the water totally and peel the skin.Cut the in circles with a 1/2 cm thickness. Heat oil in a pan and deep fry them till they are crispy and golden brown.Serve immediately with the dip. It can also be served with rice.

Grind all the ingredients to a smooth paste for the dip, traditionally 
it is crushed in mortar and pestle.
Note: It is ideal to prepare the dip before the fry as you can serve the taro fry crispy with the dip.

Pesara Pindi Bellallu / Green Gram Bubbles


A traditional dish always brings back sweet memories of childhood.And my mom was a expert to dole out so many savory dishes throughout the year.She ensured every season and moment had a special dish.She recently came over and I requested her to prepare this savory green gram bubbles tradionally known as pesara pindi bellallu. The texture and flavor of this savory evening snack can make your family rejoice the moment.The best part is it should be eaten warm with unlimited servings of ghee.!!So enjoy this savory snack my mom has prepared for me and my hubby.


Ingredients
  • 1 cup rice flour
  • 1 cup green gram flour (see the note )
  • pinch of hing
  • 1/2 tsp chilli powder
  • 1/4 cup sesame
  • oil to fry
  • salt to taste
  • ghee for accompaniment

Procedure
Mix all the above ingredients except sesame. Add enough water to it into make a nice soft dough.Divide the dough into equal part of medium size balls.Sprinkle sesame on each ball.On a plastic sheet take each ball and press it firmly to shape it in a round shape. Heat oil in a pan and deep fry it on a medium flame till each side is golden brown. Serve warm with a dash of ghee.

Note: 
1. To make green gram flour grind it into a fine powder and sieve it. 
2.While pressing each ball do not press to much, it should be little thick for it to bubble.

Sinful Spinach Pizza

Ingredients :

Palak/Spinach Sauce
  • 2 cups tightly packed spinach
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • 1 tbsp kasuri methi
  • 1 tsp dhania/coriander powder
  • 1/4 tsp garam masala
  • 1 tsp ginger garlic paste
  • 1 tsp chopped garlic
  • 1/2 tsp red chilli powder
  • 1/2 tsp finely chopped green chilli
  • 1/4 tsp cummin/jeera seeds
  • 1 tbsp olive oil
  • salt to taste
Topping
  •  1/2 cup paneer cubes (1/2 inch paneer)
  • 1/2 cup sliced mushroom
  • 1/4 cup boiled sweetcorn
  • 1 tsp kasuri methi
  • 1/4 tsp coriander powder
  • 1/4 tsp chilli flakes
  • 1/4 tsp chat masala
  • 1 tsp oil
  • 1/4 tsp salt
And
  • 1 cup grated mozzarella cheese
  • 4 pan size pizza base
Take a bowl and mix all the ingredient in toppings and let it marinate for 20 minutes.Boil the spinach for 2 minutes in microwave and make a puree out of it.

To make sauce heat oil in the pan add cummin seeds and when it splutters add onion and garlic, and let it fry till onion becomes translucent. Then add ginger garlic paste fry for another 1 min, then add tomatoes till they become soft. Add all the masalas and fry till begins to saturate. Now add spinach puree and let it boil for 5 min on medium flame.Add kasuri methi cook for a minute and switch off the flame.
To prepare the pizza , spread the sauce on the pizza base, sprinkle mozzarella cheese, add the toppings and grill it for 8-9 minutes.Your pizza is ready to eat.

Tri-Flavor Kesar Pista Choco Malai Kulfi

Since last week the temperatures has been rising in chennai and my younger sister who came to visit me had requested me to prepare a regular malai kulfi as she had seen on my blog earlier but I thought I could prepare a interesting variation . It came out pretty well and she was so delighted to have three flavors in one kulfi. So here is the recipe

Ingredients
  • 8 cups organic whole fat milk
  • 3/4 cup sugar
  • 1 bread slice
  • 1 tbsp corn flour
  • pinch of saffron (kesar)
  • 1/4 cup pista
  • 1/4 tsp crushed cardamom
  • 1 /4 chocolate chips
  • drop of saffron color ( yellow )
  • drop of green color

Cooking Procedure

In a non stick pan boil the 8 cups milk, once it starts boiling reduce it to mediumflame n stir occasionally until the milk reduces to half quantity.

In the meantime finely chop the pista n keep aside. Take the bread slice n remove the sides n cut it into small pieces,soak it in the 1/3 cup milk, add the corn flour n blend it nicely to a smooth paste n keep aside.

When the milk which was kept for boiling has reduced to half, add the above bread mixture to it n stir for 2 min until it begins to thicken then divide to three portions.

Melt the chocolate chips in microwave and blend it nicely with the first portion and fill this mixture to 1/3 level into the molds and freeze it for 1 hour

To the remaining 2 portions add the sugar and cardamom powder and stir still sugar melts and let it cool.

Then to one portion add the chopped pistachio, cardamom powder and green food color and fill the mold to to 2/3 level and freeze for 1 hour

To the third and final portion add a pinch of kesar and yellow color and fill the mold completely and freeze for 3 hours

Before serving take the mould from freezer n keep it under running water for a min and slowly remove the kulfi.

Muffins De Chocolate

Last week my younger sister came to visit me, she is studying college and stays in hostel near chennai and she was missing a lot of good food and came with a big wishlist. She loves chocolate and I prepared these muffins for her. She was so delighted with these muffins and kept asking for more

Ingredients
  • 1/4cup chocolate chips
  • 1/4 cup tutti frutti
  • 1/3 unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1/4 cup whole wheat flour(Atta)
  • 1 eggs
  • 1/3 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tbsp butter at room temp
  • 1/8 cup any cooking oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp lemon zest
  • pinch of salt
Cooking Procedure:

Put the microwave in convection mode and preheat to 225 C

Take a large bowl sieve the whole wheat flour,all purpose flour, cocoa powder, baking power , baking soda , cinnamon and salt all together.

In another bowl beat the eggs and sugar for 3 min with a hand blender with medium speed till it become fluffy.Then add butter,cooking oil,milk,lemon zest and again blend till it all mix nicely.

Take the flour and slowly add to the above egg mixture and stir till it blends properly .This can done with hand blender or even with a spatula.

Now add all the tutti frutti and chocochips to the above mixture and stir softly with spatula.Take 12 muffin cups, spray some oil n pour 3/4 batter each cup.Top some chocochips n fruit bites to the prepared muffins.Then place this tray in the microwave and let it bake for 20 min.

You muffin is ready to be served after it cools

Flavorful No Onion No Garlic Meal

I had prepared this meal ( Mint Pulav, Paneer Makhani and Palak Raitha ) for my mom who visited me this weekend.

According to ayurveda our ancient traditional medicine system of India there are three formats of food rajasik, tamasik and saatvik, foods simple and wholesome in nature are saatvik by nature, onion and garlic have sharp flavors and they fall under the "tamasik" category.

The theory is based on the fact that "tamasik" food tends to excite the negative feelings such a anger, violence, and deceit and therefore should be avoided. It is a hindu custom to have saatvik food on sacred days. Also practised by the wonderful krishna conscious devotees ( ISKCON photogallery ) around the world. So here is the recipe for the complete meal.

Paneer Makhani (Adopted from Nita Mehta Recipe)

Ingredients
  • 200 gms paneer (cut into cubes)
  • 3 large tomatoes
  • 1 inch ginger
  • 1 tbsp butter
  • 1 tbsp oil
  • 4-5 almonds or cashew
  • 1 cup milk
  • 2 tsp kasuri methi (dry fenugreek leaves)
  • 1 tsp tomato ketchup
  • 1/2 tsp chilli powder
  • 1/2 tsp garam masala
  • 1/2 tsp sugar
  • 2 green cardamoms crushed
  • 3 tbsp cream
  • salt to taste
Soak the almonds or cashew in 1/4 cup milk for a 1/2 hr and blend it a smooth paste.

Microwave tomato and ginger with a 1/2 cup water for 5 min.Blend it to a smooth paste.

Heat oil and butter in a pan, add salt,sugar,garam masala,crushed cardamom and chilli powder and stir for 30 seconds and add the prepared tomato paste and ketchup and mix well and cook till oil begins to separate.

Add the cashew paste and kasuri methi and stir well, add 1/2 cup water and cook on medium flame for 5 min.

Now add paneer and milk to get a nice gravy. Mix well and cook for another 5 min

Now add cream and serve hot.

Mint Pulav

Ingredients
  • 1 cup rice
  • 1 tbsp clarified butter or ghee
  • 1 handfull of mint leaves
  • 1 handfull of coriander leaves
  • 1/2 green peas
  • 1 tsp cumin seeds
  • 1/2 inch cinnamon stick broken into pieces
  • 2 crushed cardamoms
  • 4 black pepper
  • 1/4 tsp pepper powder
  • 1 tsp chopped green chillies
  • salt to taste
Soak rice in water for 30 min and stain it and keep it aside.

Heat ghee in a pressure cooker, add cumin seeds, cinnamon stick , cardamom and black pepper and fry till cummin seeds splutter. Add the chopped cilantro, mint leaves and green chilli fry for a min. Then add green peas,salt and pepper powder and stir for 30 seconds. Now add the soaked rice and mix nicely.

Add 1.5 cup water, stir nicely and close the pressure cooker. Let it cook for three whistles and switch off and let it cool.

Once the pressure cooker cools , open the lid add 1 tbsp ghee on top of it and mix carefully and serve hot with your choice of side dish and raitha.

Palak Raitha

Ingredients
  • 1 cup curd
  • 1 cup chopped spinach
  • 1 green chilli
  • salt to taste
For tempering
  • 1/2 tsp cumin seeds
  • 1 tsp oil
  • a pinch of hing (asafetida)
In a micowave safe bowl cook the spinach with some sprinkling of water for 2 min, when it cools blend it with the green chilli, then add curd and salt to this mixture and whisk nicely till it becomes really smooth.

Now prepare the tempering , heat oil in a tempering pan, add cummin seeds and asafetida , once cumin seeds splutter transfer this tempering on to the above curd raitha.

Your palak raitha is ready. Serve it with chappati and any other choice of your rice.

Healthy Cracked Wheat Oats Pongal

Today I was searching for a healthy breakfast and I had come across this version of oats pongal in anubhavati blog which I had bookmarked earlier long back.I prepared as per her instruction and it came out very well. I was amazed pongal can taste so good with so many healthy ingredients. So here is the recipe.

Ingredients
  • 1.5 cup cracked wheat
  • 1/2 cup oats
  • 3/4 cup moong dal
  • 6 cups water
  • 1 tsp cumin powder
  • 1/2 tsp pepper powder
  • 1/2 cup grated carrot
  • 1/2 tsp chopped ginger
For tempering
  • 2 tbsp ghee
  • 8-10 whole black pepper
  • 1 tsp cumin seeds
  • handfull of cashews
  • 2 green chillis slit
  • 1 spring curry leaves
  • pinch of hing
Cooking Procedure

Dry roast cracked wheat, oats, moong dal each seperately and mix them and keep aside.

In a pressure cooker pan heat 1 tbsp ghee then add cumin seeds and once it splutter add grated carrot,ginger let it fry for a while then add six cups water,when it starts to boil add salt,pepper and cumin powder and the above dry roasted ingredients. Mix well and close the lid and pressure cook for 3 whistles and switch off.

To prepare tempering in a tempering pan add 2 tbsp ghee once it get heated add cumin seeds and once it splutter add cashew nut, crushed black pepper,green chilli,curry leaves,pinch of hing and stir. Switch it off and keep aside.

Open the pressure cooker after it cools add the above tempering to it. Switch on the gas and stir the cracked wheat oats pongal. Stir well till uniform consistency and if need add little milk.

Serve hot.

Delicious Tender Coconut Pudding

Coconut water is my favorite summer quencher and in chennai the summer has started. My hubby loves puddings. This weekend when I went out to a restaurant I saw a tender coconut pudding on the menu card.While shuffling through the net I got a set of recipes which gave me idea how to make this tender coconut pudding. It had a unique taste and it was gobbled up in no time.So here is the recipe

Ingredients
  • 2 tender coconut pulp
  • 1 cup tender coconut water
  • 8 gms gelatin
  • 1/2 cup milk
  • 1/2 cup hot water
  • 1/4 cup condensed milk (or 1 tbsp sugar)

Mix gelatin in hot water and stir continously till it blends. Then add this mixture to boiling milk and stir for a while and keep it aside.

Blend the tender coconut pulp with little coconut water and shift to the container. Now add the remaining coconut water,condensed milk and the milk with gelatin.Stir it nicely and let it rest .

Once it comes to room temperature cover the container with aluminium foil and keep it in the fridge for 3-4 hours.

After 3-4 hours slightly turn it out on a plate , garnish with your choice of topping (I used grated red cherry) and enjoy.

Schezwan Paneer Frankie

Sometimes on weekends we love to eat tibbs schezwan paneer frankie..a nice name for a wrap which can contain paneer,vegetables or chicken pieces with some sliced onions . However it is a little expensive and also use full maida which is unhealthy so I wanted to prepare a healthier option at home and surprise my hubby !! So here we gooooo

Basically the total process needs 3 steps
  1. Preparing the stuffing
  2. Making the wrap roti
  3. Assembly
Ingredients
  • 1 cup paneer cubes (cottage cheese)
  • 1/2 cup chopped bell pepper
  • 1/4 cup diced baby corn
  • 2 tbsp chopped onion
  • 1 tbsp chopped garlic
  • 1/2 tbsp grated ginger
  • 1 tsp green chilli
  • 1 tbsp chopped celery
  • 1 tbsp chopped red chilli
  • 2 tbsp red pepper sauce
  • 3 tbsp olive oil
  • 1 cup homemade vegetable stock
  • 1 tbsp corn flour dissolved in 2 tbsp water
  • 1 tsp vinegar
  • 2 tsp sugar
  • salt to taste
Step 1: Schezwan Sauce Preparation

Heat oil in pan/wok in a high flame, saute the garlic,green chilli,red chilli, green chilli, ginger, onions, celery for a minute

Add the vegetable stock and mix well. Add the corn flour mixture, vinegar,red pepper sauce, sugar, salt amd bring to a boil and keep aside

In another pan add 1 tbsp oil and saute the paneer cubes, bell pepper, baby corn for 3-4 minutes on high flame...add this to the above prepared sauce and keep aside.

Step 2 : Preparing the wrap roti

Ingredients
  • 1 cup all purpose flour
  • 1 cup wheat flour
  • 2 tbsp cold butter
  • a pinch of salt
Mix both the flour with salt,then add the butter and crumble with ur hands and mix nicely my by adding little by little water and make a soft dough.Let it rest for ten minutes.

After ten min knead the dough into a smooth ball and then divide the dough into 10 parts.Make them into small balls, with a rolling pin roll it into a nice thin circle of 5 - 6 inch diameter and as thin as possible.

Heat the skillet/tawa and it should be hot. Put one roti and after 2 min flip it let it cook for 1 min. Both the sides should cook nicely. Repeat the procedure for the rest of wraps

Step 3 : Assembly of Frankie

Ingredients
  • 10 wrap roti (prepared above)
  • 1 cup sliced onion
  • 1.5 cup above schezwan paneer
Take on wrap and spinkle some onion slices along the length

Take one table spoon of schezwan paneer on top of onion slices

Wrap the paneer in the roti as per the steps below as it will avoid spillage from the bottom

Wrap it and place it on the tawa until roti is warm, then roll a small paper tissue on the bottom and serve warm

Note:

1. You can add chicken pieces in place of paneer
2. For egg lovers you can put some beaten egg on the roti, toast it on tawa and then assemble it.

Traditional Andhra Style Sweet Bobattu

Bobattu a traditional sweet roti also known as obbattu, puran poli is the perfect traditional dessert served during festival times in andhra with pulihora (tamarind rice) make a best combination of sweet and sour tastes blending with one another.

I never realized this combination until my MIL used to prepare this for my hubby. Bobbatu is served with a little serving of ghee and pulihora in my home and it tastes so divine.

My MIL prepares the best traditional andhra style dishes like bobattu, pulihora, pessarattu ... in my home and I would rate this as one of her best. So here is the recipe

Ingredients
  • 1 cup chana dal
  • 2 cups maida
  • 1 cup sugar
  • 2 cardamom powder

In a bowl mix the maida with water to a smooth dough and the poke some holes in it with your fingers and pour the oil over it ,let maida soak in oil for 3 hrs .

Soak the chana dal for 30 min before cooking .Pressure cook the dal along with 3 cups water for 3 whistles and switch of the flame .After it cools open the pressure cooker and stain the water from dal completely .

In a blender make a smooth paste of sugar and dal.Heat a broad open pan and put this paste and stir continuously till this paste start to caramelize.Transfer the whole mixture to a plate ,keep aside and let it cool.After the dal mixture cools ,divide the total paste to large lemon size balls .

Divide the the dough into small lemon size balls. Spread it flat into a small circle and place the sweet dal mixture in the center and enclose it. Then put on a greased plasic sheet and pat it nicely to form a nice circular shape.

Heat the tawa and place the each piece till golden brown on each side.

Serve hot with ghee and tamarind rice.

Aromatic Aloo Methi Curry

Baby potatoes are cooked with fresh fenugreek leaves along with some aromatic spices which make this dish very exotic and very ideal when you have guests at home. The special twist of this preparation is using crushed spices which give it a unique taste.

Ingredients
  • 2 cups baby potatos
  • 1 cup chopped fresh fenugreek leaves (methi)
  • 1/2 cup chopped onion
  • 1/2 cup chopped tomatoes
  • 4 cloves garlic
  • 6-7 whole black pepper
  • 1 tsp cumin seeds
  • 1 tbsp coriander powder
  • 1/2 tsp red chilli powder
  • 1 tbsp chopped fresh coriander
  • 2 tbsp oil
  • 1 tbsp butter
  • pinch of sugar
  • salt to taste
Cooking Procedure

Boil the baby pototoes in pressure cooker for 3 whistles after it cools peel it and keep aside

Crush the garlic, cumin and black pepper to a fine paste and keep aside.

Heat 1 tbsp oil in a pan, add the boiled potatoes and shallow fry till its golden brown

Heat oil and butter in pan, add cumin seeds once it splutter add the crushed above paste and then fry for 30 seconds, then add onion and fry till it slightly translucent or golden brown.

Add the tomatoes, coriander powder,red chilli,sugar and salt and cook till oil begins to saturates

Now add the potatoes and mix nicely, then add the chopped methi leaves and let it cook for 5 to 10 min

Add the chopped coriander leaves and let it cook for 2-3 min.

You curry is ready, serve with rice or rotis

Pomegranate Cucumber Sesame Salad

Pomegranates are being hailed as a super-food which can protect the heart.

Scientists in Israel have shown that drinking a daily glass of the fruit's juice can reduce the risk of cardiovascular disease.

"Pomegranate juice contains the highest antioxidant capacity compared to other juices, red wine and green tea," said Professor Michael Aviram, who led the team.

This is good news, for antioxidants are the naturally occurring substances in plants that protect the body from free radicals - 'bad' chemicals in the blood.

Free radicals alter cholesterol in a process known as oxidation, which is thought to speed up the hardening of the arteries.

In studies at the Rambam Medical Center in Haifa, the juice of the fruit was found to slow down cholesterol oxidation by almost half, and reduce the retention of LDL.

That is the 'bad' cholesterol which forms atherosclerotic lesions, the fatty deposits which narrow the arteries and lead to heart disease.

"Antioxidants can protect us against the oxidative stress in our industrialised world, such as pollution, chemicals, viruses and bacteria, and consequently cardiovascular diseases and cancer," said Professor Aviram.


Pomegranate Cucumber Sesame Salad

Ingredients
  • 1 cup pomegranate seeds
  • 1 cup chopped cucumber
  • 2 tbsp chopped cabbage
  • 1 tsp toasted sesame seeds
  • 1/4 tsp honey
  • 1/4 tsp lemon juice
  • 1 tsp extra vergin olive oil
  • 1/4 tsp finely chopped green chilli
  • salt to taste
Procedure

In a bowl add the olive oil,honey, lemon juice, toasted sesame seeds with salt and mix nicely.

Now add the pomegranate, cabbage, cucumber and green chilli.

Toss well and serve chilled.
