Low Fat Eggless Banana Bread


This is my first cake recipe without eggs and believe me you won’t miss the eggs! With it unique blend of ingredients you can still make a eggless cake that can rock a party.The original recipe was adopted from Jayshris Kitchen who inspired me to try this recipe. I changed it a bit to suit my taste-buds. It came out very well soft, moist with a tender flavor of bananas. Here is the recipe ...

Ingredients
  • 3/4 cup wholewheat flour
  • 1/2 cup all purpose flour
  • 3/4 cup brown sugar
  • 2 ripe bananas
  • 1/4 cup milk
  • 2 tbsp yogurt
  • 1/4 cup oil
  • 1/2 tsp cinnamon powder
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp tutty fruity
  • 1/8 tsp salt
Procedure
Preheat the oven to 180 degree Celsius.Grease the loaf pan and keep aside. Sieve the dry ingredients,wheat flour, all purpose flour, baking soda, baking powder, salt and cinnamon powder together 3 times.

Beat milk and sugar together till sugar dissolves.Add oil,yogurt,mashed banana, vanilla extract and mix nicely.Combine with the above dry ingredients and mix nicely until all lumps dissappear. Pour the batter in a 9x5x3 inch loaf pan upto 3/4 level.Sprinkle some tutty fruity over it. Bake for 50 minutes and test with a toothpick in the very center of the loaf to come out clean.Let it cool on a cooling rack, slice and enjoy.

Note:
1.You can replace brown sugar with normal sugar but it will be more sweeter.
2.Adding cinnamon powder is optional however it gives a good flavor

Eggless Oat - Banana Muffins


After a little hiatus, I am back with another edition of Srivalli's blogging marathon. Yes, it's BM# 16 time and my posts this week are going to be "Pick one - Cook all" theme based and my ingredient choice is oats. My first oats post is going to be these yummy muffins that are regular at my home. They are perfect for breakfast or snacking. This recipe particularly comes handy when those overripe bananas need to be put for good use. You can keep the recipe basic without the addition of nuts / dry fruits but I recommend them since they definitely enhance the flavor and make these muffins special.

Ingredients:(Makes 12)
  • 3/4 cup oat flour (Make your own flour by grinding either quick / rolled oats.)
  • 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sweetened coconut flakes
  • 1/4 cup raisins
  • 1/4 cup walnuts
  • 1/4 cup melted butter
  • 1/2 cup sugar
  • 4 mashed bananas

Method:
* Preheat oven to 375 deg F / 190 deg C.
* Combine the flours, baking soda, baking powder, salt, coconut flakes and raisins in a bowl.
* Mash bananas in another bowl. Add sugar and mix well. Stir in melted butter. Then stir in dry ingredients.
* Grease or line the muffin pan with paper cups. Spoon the batter into cups so that it fills up to 3/4th of each cup. Sprinkle walnuts.
* Bake until a toothpick inserted at center comes out clean or for about 25 - 30 minutes.

Grapefruit, Oats & Chocolate Chips Eggless Muffins

I have never tried making muffins with grapefruits and some grapefruits were sitting sadly since few days in my fruits basket, immediately i squeezed out their juice and grated their zest which i used in my super fluffy muffins for our snacks with oats, chocolate chips and whole wheat flour without eggs but not vegan as i used butter,milk and yogurt in this beautiful muffins..I can definitely say that i have given a second life to those mildly sour and bitter grapefruits...The picture itself says how tasty those beautiful muffins na...We enjoyed these cute looking muffins for our snacks with a cup of tea...

Grapefruit Oats Muffins
Ingredients:
  • 1+1/2cups Whole wheat flour
  • 1/2cup Rolled oats
  • 1tsp Grapefruit zest
  • 1/4cup Grapefruit juice
  • 1cup Yogurt
  • 1/4cup Milk
  • 1tsp Baking powder
  • 1/2tsp Baking soda
  • 1/4cup Butter
  • 3/4cup Sugar
  • 1tsp Vanilla extract
  • 1/4cup Chocolate chips
Method:
Preheat the oven to 350F..Sieve the flour with baking soda and baking powder, add the rolled oats and chocolate chips to the flour and keep aside...Meanwhile beat together the butter and sugar until they soft mixture, add the grapefruit juice,grapefruit zest,yogurt and vanilla extract, beat until everything get well mixed,finally add the milk and give a stir..

Now add gently the dry ingredients to the wet ingredients,mix well with a spatula, dont overmix the batter,else ur muffins will turns hard..Pour enough batter in greased muffins tray and bake for 15-20minutes..

Enjoy warm with a cup of tea..

Eggless,Sugarfree Chocolate Puffed Rice Wholewheat Pancakes

Last week we had a wonderful climate,its wasnt neither too cold nor too hot, since yesterday the climate is getting worst and its rainy here..I simply prepared this super spongy pancakes yesterday for our snacks as we guys are craving something for chocolate and enjoyed a lot with maple syrup..Actually i was thinking to make some pancakes without oats but while going through my pantry, i got a not even half a packet of puffed rice..Immediately i decided to make pancakes with those puffed rice,i soaked them in buttermilk and grounded as fine paste which later i mixed with dark chocolate powder and whole wheat flour along with honey and baking soda..These pancakes were extremely spongy and delicious, since i used non stick pan they were completely oilfree..Wat an interesting and guilt free pancakes na,needless to say am very proud to create this wonderful looking pancakes and we loved it for our snacks..Obviously am sending this yummy pancakes to Ivy's Creative Concoctions & to Kurinji's HRH-Puffed Rice..

Chocolate Puffed Rice Wholewheat Pancakes
Ingredients:
  • 1cup Puffed rice
  • 1cup Wholewheat flour
  • 2tbsp Honey
  • 1/4tsp Baking soda
  • 1cup Buttermilk
  • 3tbsp Dark chocolate powder
  • A pinch salt
  • Oil or butter for cooking
Method:
Soak the puffed rice in buttermilk for an hour, grind the soaked puffed rice with buttermilk as fine paste, take the paste in a bowl,add the honey,wholewheat flour,baking soda,dark chocolate powder,salt...stir until they turns as bit thick batter, heat a non stick pan,gently drop enough batter for pancakes,drizzle oil or butter if needed,cook on both sides until they get well cooked..

Serve warm with maple syrup or nutella spread..

Eggless Chocolate Muffins

I know i went missing here for a month. I needed the break from this webworld, now i can say proudly that iam not addicted to blog or FB or WEB in total :) apart from funny thoughts flooded, i gave treat to my Depression, by making these Eggless Chocolate Muffins. This is Superb eggless recipe, suggested by Sharmilee. Its Easy, you will know when you prepare it.

Eggless chocolate cupcakes

Recipe Copied from my Eggless Moist Chocolate Cake
its a Fool Proof Recipe I tell You.

Baking Time : 25-30 mins, Yields 18 muffins.

How to Prepare Eggless Chocolate Muffins?

Wet Ingredients:
  • Cold Water - 1 and half cup
  • White Vinegar - 1 and half tbsp's
  • Brown Sugar (or) Sugar - 1 cup
  • Oil - 6 tbsp's
Mix the above Wet ingredients in a bowl together. Let the Sugar Dissolve well.

Dry Ingredients:
  • All Purpose Flour / Maida - 1 and half cupCocoa Powder - 1/4 cup
  • Baking Soda - 1/2 tsp
  • Salt - a small pinch
Sift the flour and cocoa powder along with the salt and baking soda for atleast 3 times,

So that no lumps of cocoa powder / all purpose flour are there and also the baking soda is mixed well with the flour.

Mix the Dry Ingredients along with the wet ingredients and stir slowly. make sure no lumps are formed in the mix.

Pre-Heat the Oven to 180c and line the Muffin tray with Muffin Liners.

Pour the mix on to the Muffin tray and bake it for 25 mins exactly. Check whether muffins are baked, by insering a toothpick in the centre of a muffins, it should come out clean, else bake for another 5 mins.

Remove the Muffins from the tray and cool them on wire wrack. Let them cool down for 10 minutes.

Put the Muffins in Refrigerator for about 2 hrs and serve chilled.

Eggless chocolate muffins

To make Icing:

Mix the Icing sugar (5 tbsp's) with warm water (1 tbsp) and beat well. spread the icing over the muffins and serve.
Notes:

Lemon Juice can be uses instead of White Vinegar.

Brown sugar works perfect than Plain Sugar.

I feel cooling the muffins makes it taste better.

Eggless Lemon Poppyseeds Muffins

Am an addict to citrus flavoured bakes while my family members are quite opposite to me, its quite hard to for me to avoid my fav citrus flavoured bakes, somehow i managed myself to make this eggless lemon poppyseeds muffins sterday, my kids enjoyed having this yummy muffins for their snacks while my H doesnt even want to have a bite..I enjoyed having this delicious spongy muffins with my kids for my snacks also for my breakfast with a cup of warm milk,for the first time i tried making this muffins with poppyseeds which i picked after a long hesitation needless to say we loved the addition of poppyseeds in this spongy muffins...U may see more bakes with poppyseeds quite often in my space...These muffins goes to Heather's BSI-Lemon..

Eggless Lemon Poppyseeds Muffins
Ingredients:
  • 2cups All purpose flour
  • 1/2cup Sugar
  • 1/4cup Butter
  • 1/4cup Oil (sunflower or canola)
  • 1cup Buttermilk
  • 2tbsp Lemon juice
  • 1tsp Lemon zest
  • 1tsp Baking powder
  • 1tsp Baking soda
  • 1tsp Vanilla extract
  • 2tsp Poppy seeds
Method:
Preheat the oven to 350F..Sieve the flour with baking soda and baking powder,add the poppy seeds and keep aside...Beat the sugar,butter and oil until the sugar gets well dissolved, immediately add the buttermilk,lemon juice,lemon zest and vanilla extract, whisk everything well..

Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula,batter will be quite thick but dont overmix the batter,else ur muffins will turn hard...Drop enough batter to the silicon muffin tray and bake for 20-25minutes until a skewer inserted comes out clean..

Enjoy with a cup of tea..

Eggless Sugarfree Wholewheat & Barley Waffles

Its has been a long i prepared waffles at home, my daughter doesnt have that much time to have her breakfast as she is preparing for her upcoming exams, she particularly avoids her breakfast just by saying breakfast will take some of her precious time, which i totally never accept.. I know she loves waffles that too when served along with nutella...Finally i decided to make some waffles with home made barley flour along with whole wheat flour and prepared as a eggless version which is quite completely sugarfree as i used honey in this waffles, these waffles turned out super prefect and my daughter had a wonderful breakfast with this healthy waffles and nutella spread...Even its suits well for snacks with some fruit jams and agave syrup..An excellent waffles to enjoy without any guilt..Needless to say these waffles goes to WWC-Barley for Breakfast hosted by me,event by Sanjeeta..

Eggless Wholewheat é Barley waffles
Ingredients:
  • 1cup Whole wheat flour
  • 1/2cup Barley flour
  • 1tbsp Flax seed meal
  • 1/4cup Apple sauce
  • 2tbsp Olive oil
  • 1/4cup Honey
  • 1tsp Baking powder
  • 1tsp Vanilla extract
  • 2cups Milk
Method:
Preheat the waffle maker...Mix the flax seed meal in a warm water as a thick paste...Sieve together the flours and baking powder, beat together the flaxseed meal paste, honey,applesauce,vanilla extract,oil and milk, gradually add the wet ingredients to the dry ingredients and turn as a batter..Pour a ladle of batter to the waffle maker until they get cooked..

Serve with a cup of warm milk with nutella spread,jams or simply with maple or agave syrup...

Eggless Raisins & Chocolate Breakfast Scones

Its has been a long i prepared scones for breakfast, scones are really handy,healthy,filling and when dipped in hot chocolate or coffee they tastes absolutely fabulous, everyone at home love scones specially if they are prepared with chocolates, this time i prepared this scones by adding few raisins which are quite popular for their antioxidants along with chopped dark chocolate chunks.. Also i prepared this scones completely healthy with wholewheat pastry flour and rolled oats, its completely egg free,sugar free since i went for maple syrup and apple sauce, both together turned out these scones prefectly with mild sugar, if u dont have maple syrup u can go very well for sugar or else for honey...A prefect breakfast scones to enjoy without any guilt to kick start a day..

Eggless Raisin & Chocolate Scones

Ingredients:
  • 1cup Whole wheat pastry flour
  • 1cup Rolled oats
  • 1/4cup Raisins or golden raisins
  • 100grms Dark chocolate bar (chopped)
  • 2tbsp Cooking oil
  • Milk for brushing
  • 1tsp Baking powder
  • 1/2tsp Baking soda
  • 3tbsp Apple sauce
  • 2tbsp Maple syrup
Method:
Preheat the oven to 350F..Take the flour,rolled oats, raisins,chopped chocolate bar,baking powder, baking soda rogether in a bowl, mix everything..meanwhile mix the oil,apple sauce and maple syrup together in a bowl,gradually add the wet ingredients to the dry ingredients and knead as a soft dough (sprinkle water if needed)..Dust the dough and roll as thick disc..Cut the disc as triangular scones..Arrange the scones over the baking sheet lined over a baking tray, brush the scones slightly with milk and bake for 20-25minutes in middle rack..

Conserve them in air tightened box and enjoy for breakfast with a cup of coffee or hot chocolate..

Eggless Pear & Oats Upside Down Cake

I usually make upside down cake with pineapple,this time i tried them as eggless version along with pears and oats..This cake tastes extremely delicious,healthy and a super yummy cake which is quite low in fat since i used yogurt and oil instead of butter...Needless to say that this cake vanished within few minutes,yep we enjoyed having them before the cake gets cool down completely..Thats y i couldnt able to get a click of the whole cake..This cake was quite easy to prepare and goes for easy ingredients too...I have completely skipped the caramel syrup usually the upside down cake goes for and prepared them simply using the sliced pears..

Pear Upside down oats cake
Ingredients:
  • 1+1/2cup All purpose flour
  • 1/2cup Rolled oats
  • 3/4cup Sugar
  • 1cup Yogurt
  • 1cup Oil
  • 2nos Pears(sliced)
  • 1/2cup Boiling water
  • 1tsp Baking soda
  • 1tsp Baking powder
  • 1tbsp Apple cider vinegar
Method:
Preheat the oven to 350F...Line a baking sheet over a baking tray,arrange the sliced pears over the baking sheet and keep aside.. meanwhile take the all purpose flour,rolled oats and baking powder, mix and keep aside..now beat the yogurt,sugar,oil until the sugar gets well dissolved,add the baking soda and apple cider vinegar,give a whisk...Add the wet ingredients along with boiling water to the dry ingredients,mix gently with a spatula..

Pour the cake batter over the sliced pears and bake for 20-25minutes in middle rack untile a skewer inserted comes out clean..Keep aside and let them cool completely...

Enjoy with a cup of coffee...

Eggless Chocolate Cookies Sandwich

Since i baked the Eggless Chocolate Butter Cookies, everyone at home asked me to make some more cookies, thought of making as cookies sandwich with the leftover moka buttercream which i have prepared already for making Brownies Sandwich, i went for making again some chocolate cookies but not as butter cookies,this time i used less butter and completed with oil and applesauce also used grounded oats for making these yummy and healthy cookies, these cookies turned out super prefect,eggless and the moka buttercream in between these delicious cookies tasted more divine, they looks exactly like crinkle cookies once they came out of the oven,but unfortunately i didnt rolled them over the sugar before baking,let me try one more time to make some eggless crinkle cookies, needless to say we enjoyed munching these cookies..Also am very happy to say that recently i have joined Blogging Marathon, i'll be running with Srivalli, PJ,Reva,Monika & Priya Vaasu, if u r interested just post a comment at Srivalli's space friends, sure we are going to have loads of fun..For the moka buttercream,pls do check here..

Chocolate Cookies Sandwich
Ingredients:
  • 1cup All purpose flour
  • 1cup Whole wheat pastry flour
  • 1/2cup Grounded Oats or Oats flour
  • 3tbsp Dark chocolate powder
  • 2tbsp Butter
  • 2tbsp Canola oil
  • 3/4cup Sugar
  • 3tbsp Apple sauce
  • 1tsp Baking powder
  • 1/2tsp Baking soda
Method:
Preheat the oven to 350F..Take the all purpose flour, whole wheat pastry flour, dark chocolate powder, grounded oats along with baking powder, baking soda in a bowl, meanwhile take the sugar,oil,butter,apple sauce together, mix everything until the sugar gets dissolved, gradually add this wet ingredients to the dry ingredients and turn them as a dough..

Line a baking sheet over a baking tray, make small balls from the dough, bake them 15-20minutes in medium rack, let them cool completely..

Fill the moka butter cream in a pastry bag, squeeze out over a cookie and top them with an another cookie to turn them as a sandwich, enjoy with a cup of milk or coffee for snack...
